I'm baaaack!

Ok, so after my last post about how I am going to be go get 'em and not going to quit...welp, I quit!  And the saddest part is, it was only after 1 day!  Yes, 1.  I can't believe it myself!  All I can say for myself is two things.  1.  Diets are the hardest thing I have EVER done!  I  would take laboring a child everyday.  2.  This time around is different! 

I am finding my motivation!  I am the heaviest I have EVER been!  Pants are so tight, I get grumpy!  I am bigger than someone I swore I would never be bigger than.  I am ready.

So, today is Day 4 of VLCD and I am doing great!  I did go off plan a tiny bit yesterday BUT it is almost that time of the month and I got right back on!  That is what matters!

I am not looking back, but forward!

Ok, now for a recipe I had last night and LOVED!  I follow Carol Ensminger.  I found her on youtube back when I first started the diet and loved her recipes.  She has been successful and able to keep the weight off and manage a healthy lifestyle after the diet and I find her very inspirational!  So, I signed up for her emails from Miracle Skinny Drops and yesterday I got this recipe via email.

Celery Soup


4-5 stalks celery, chopped, including leaves

2-3 tomatoes, chopped

1/2 cup onions, chopped

2 Tbsp MCT oil

2 – 3 C. vegetable broth

Spices to taste

Braggs Liquid Aminos

Sea Salt & Pepper

Parsley

Cayenne pepper (optional)

Cook onions in a heated fry pan with coconut oil until translucent. Add garlic and cook a few minutes longer, stirring as needed. In a larger pot, cook celery in broth until tender. Add seasonings to taste and simmer on medium heat for 15-20 minutes.
 
It was really good!  I had it for dinner and it makes a TON I actually couldnt eat it all.  I enjoyed it with a glass of stevia sweetened tea and 2 melba toast!  It was great for a cold fall night!  I did make a few alterations.  I added my allowed portion of shredded chicken and then I ised EVOO to saute the onions (I found I can actually use a small amount of that a day instead of coconut oil and be fine) and I didn't really add any seasonings..it didn't need it!
